Potato starch (Solanum Tuberosum spp.)

Potato starch is a starch extracted from the tubers of Solanum tuberosum, a plant of the Solanaceae family cultivated worldwide. It appears as a fine white powder, obtained by grinding and drying the tubers after removing their water and protein content. From a nutritional standpoint, potato starch is essentially composed of complex carbohydrates. When uncooked, it represents a source of resistant starch, a prebiotic fibre form that is not digested in the small intestine and contributes to nourishing the intestinal microbiota. It also features a low protein and fat content, and is naturally gluten-free. In the field of supplementation, potato starch is primarily used as an excipient or bulking agent in the manufacture of capsules and tablets. It contributes to stabilising the formulation, improving powder flowability, and facilitating product shaping, without interfering with the active ingredients it accompanies.
