Soy lecithin
Soy lecithin is a complex of natural phospholipids extracted from the soybean through pressing and decanting. Mainly composed of phosphatidylcholine, phosphatidylethanolamine and inositol, it acts as a natural emulsifier, helping to blend fatty and aqueous phases. It is naturally found in many animal and plant tissues, as well as in eggs. Its phospholipids, and particularly the choline it contains, contribute to normal lipid metabolism and the maintenance of balanced liver function. Choline also plays a role in cognitive function and nerve transmission, as it is involved in the synthesis of acetylcholine, an essential neurotransmitter. Soy lecithin supplementation may be of interest when dietary intake of phospholipids or choline is insufficient, particularly in the context of a vegan or low-animal-product diet. It is generally well tolerated and represents an easily absorbed source of choline for the body.
