Soy
Soy (Glycine max) is a legume native to East Asia, cultivated for thousands of years for its seeds, which are rich in protein, lipids, and micronutrients. It is one of the most complete plant-based protein sources, providing all essential amino acids. It is found in many forms in food and supplementation: oil, flour, isolated proteins, lecithin, and isoflavone extracts.
