Safflower Oil

Safflower oil is a vegetable oil extracted from the seeds of Carthamus tinctorius, a flowering plant in the Asteraceae family that has been cultivated since antiquity for both dyeing and culinary purposes. It is notable for its lipid profile, which is rich in unsaturated fatty acids — primarily linoleic acid (omega-6) in the polyunsaturated variety, or oleic acid (omega-9) in the high-oleic variety. Safflower oil also contains vitamin E, a fat-soluble antioxidant that contributes to the protection of cells from oxidative stress, and vitamin K, which is involved in normal blood clotting and the maintenance of normal bones. As a supplement to a varied diet, safflower oil may be of interest to individuals with insufficient intakes of unsaturated fatty acids or fat-soluble vitamins. Its good digestive tolerance and neutral taste make it an easily incorporated ingredient, whether in capsule form or as a liquid oil.
