Potassium sorbate

Potassium sorbate is the potassium salt of sorbic acid, a short-chain fatty acid of natural origin initially extracted from the berries of the rowan tree. Today produced by synthesis, it appears as a white powder or granules that are highly soluble in water, making it a particularly suitable preservative for liquid formulations. Its action is based on its ability to inhibit the growth of moulds, yeasts and certain bacteria by disrupting their cellular metabolism.
