Beta carotene
Beta-carotene is a natural pigment belonging to the carotenoid family, responsible for the orange colour of many plant foods such as carrots, sweet potatoes and red peppers. It is the most abundant precursor of vitamin A found in the diet: the body converts it into retinol as needed, making it a safe source of vitamin A with no risk of excessive accumulation. As a precursor to vitamin A, beta-carotene contributes to the maintenance of normal skin, the normal functioning of the immune system and the preservation of normal vision. It also has antioxidant properties that help protect cells against oxidative stress. Dietary intake of beta-carotene can vary depending on the variety and quantity of fruits and vegetables consumed. Supplementation may be of interest for people whose diet is low in colourful plant foods or whose vitamin A requirements are higher, in order to help meet recommended daily intakes.
