Lemon concentrate (Citrus limon)
Lemon concentrate is obtained from the fruit of the lemon tree (Citrus limon), a plant of the Rutaceae family native to South Asia. It is produced by partially evaporating the water content of fresh lemon juice, which concentrates its active compounds: vitamin C, organic acids, flavonoids and natural pigments. It is notably used as a natural colourant in food supplement formulations. Lemon is well known for its high vitamin C content, which contributes to the protection of cells against oxidative stress and to the normal functioning of the immune system. Its flavonoids, including hesperidin, are also studied for their antioxidant properties. In concentrated form, these compounds are present in higher amounts than in raw juice. In food supplements, lemon concentrate is primarily valued as a naturally derived colourant, replacing synthetic dyes. It thus contributes to cleaner label formulations while providing a modest intake of micronutrients from the fruit.
