Acide citrique anhydre

Anhydrous citric acid is a natural organic acid found in many fruits, particularly citrus fruits such as lemons, oranges, and grapefruits. In its anhydrous form, it contains no water molecules, which gives it excellent stability and high solubility. It is industrially produced through the fermentation of sugar-based substrates using moulds, primarily Aspergillus niger. In food supplements, anhydrous citric acid is mainly used as an excipient, acting as an acidulant, pH regulator, and flavouring agent, contributing to improved palatability and formula stability. It also plays a key role in the formation of mineral salts such as magnesium citrate and calcium citrate, forms noted for their good bioavailability. Its use in formulations contributes to the preservation and organoleptic quality of products. Well tolerated at standard doses, anhydrous citric acid is recognised as safe by European regulatory authorities and is listed among authorised food additives (E330).
